1 lb boneless skinless chicken breasts (cut into bite-sized pieces)

1 lb potato gnocchi (shelf-stable or refrigerated)

4 cloves garlic (minced)

1/3 cup grated Parmesan cheese (plus more for garnish)

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste

Fresh parsley (chopped, for garnish)

1/4 cup heavy cream or half-and-half (optional)

Lemon zest (optional)


Instructions

1. Season the chicken with salt, pepper, Italian seasoning, and a bit of olive oil in a bowl. Let sit for 5–10 minutes.

2. Heat 1 tablespoon olive oil in a skillet. Sear chicken in batches until golden and cooked through, about 5–6 minutes. Remove and set aside.

3. In the same skillet, melt 1 tablespoon butter. Add gnocchi and let sear undisturbed for 2–3 minutes, then stir and cook until golden and tender.

4. Reduce heat to medium-low. Push gnocchi to one side and sauté minced garlic in the remaining butter for 1–2 minutes. Add red pepper flakes if desired.

5. Return chicken to the skillet. Add optional cream if using and toss gently to coat everything in the garlic butter. Heat through.

6. Remove from heat and stir in Parmesan and parsley. Serve hot with more cheese and optional lemon zest.
