These Crispy Crunchy Parmesan Potatoes are the perfect side dish, appetizer, or snack. Coated in a flavorful parmesan crust and baked to golden perfection, they are irresistibly crunchy on the outside and soft on the inside.
Ingredients
1 lb baby potatoes
1/2 cup grated parmesan cheese
1/4 cup breadcrumbs (panko preferred)
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp dried oregano or thyme
Salt and pepper to taste
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Wash and dry baby potatoes. Cut larger ones in half.

In a bowl, mix parmesan, breadcrumbs, garlic powder, paprika, dried herbs, salt, and pepper.

Toss potatoes with olive oil, then coat evenly with the parmesan mixture.

Arrange in a single layer on the baking sheet and bake for 25-30 minutes, flipping halfway.
