1 ½ tablespoons Cajun seasoning

½ teaspoon smoked paprika

½ teaspoon garlic powder

¼ teaspoon black pepper

¼ teaspoon salt

2 tablespoons olive oil

10 ounces rotini pasta

1 tablespoon butter

3 garlic cloves, minced

1 cup heavy cream

½ cup whole milk

¾ cup grated Parmesan cheese

1 cup roasted corn kernels

1 teaspoon Cajun seasoning (for sauce)

½ teaspoon onion powder

¼ teaspoon cracked black pepper

Salt to taste

Fresh parsley or scallions, chopped (for garnish)

Optional: red pepper flakes, lemon wedge, or mozzarella


Instructions

1. Pat chicken dry and season with Cajun seasoning, paprika, garlic powder, salt, and pepper. Let rest for 15–20 minutes.

2. Boil pasta in salted water until al dente. Reserve ½ cup pasta water and drain.

3. In a pan, melt butter and sauté garlic until fragrant. Add cream and milk, simmer gently.

4. Stir in Parmesan, Cajun seasoning, onion powder, pepper, and salt. Add roasted corn and simmer 2 minutes.

5. Heat olive oil in a hot skillet. Sear chicken bites 3–4 minutes per side until blackened and cooked through.

6. Add cooked pasta to the Alfredo sauce. Toss to coat evenly and heat through.
