  • 1.5 lbs boneless, skinless chicken tenders (or sliced chicken breasts)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Cooking spray or oil mist

For the Creamy Mustard Dip:

  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/2 tsp dried thyme or oregano
  • Salt and pepper to taste

Instructions

  1. Marinate chicken tenders in buttermilk for at least 30 minutes (up to overnight).
  2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or place a wire rack on top.
  3. Prepare three bowls: one with seasoned flour (add garlic powder, onion powder, paprika, salt, and pepper), one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan.
  4. Dredge each chicken piece in flour, dip in egg, then coat thoroughly in the breadcrumb mixture.
  5. Place tenders on prepared baking sheet, spray lightly with cooking oil.
  6. Bake for 18–20 minutes, flipping halfway through, until golden and internal temp is 165°F (74°C).
  7. While chicken bakes, whisk together all mustard dip ingredients in a bowl. Adjust seasoning to taste.
  8. Serve baked tenders hot with creamy mustard dip on the side.
