- 1.5 lbs boneless, skinless chicken tenders (or sliced chicken breasts)
- 1 cup buttermilk
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- Cooking spray or oil mist
For the Creamy Mustard Dip:
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1/2 tsp dried thyme or oregano
- Salt and pepper to taste
Instructions
- Marinate chicken tenders in buttermilk for at least 30 minutes (up to overnight).
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or place a wire rack on top.
- Prepare three bowls: one with seasoned flour (add garlic powder, onion powder, paprika, salt, and pepper), one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan.
- Dredge each chicken piece in flour, dip in egg, then coat thoroughly in the breadcrumb mixture.
- Place tenders on prepared baking sheet, spray lightly with cooking oil.
- Bake for 18–20 minutes, flipping halfway through, until golden and internal temp is 165°F (74°C).
