- 1 medium eggplant, sliced into 1/4-inch rounds
- 2 eggs, beaten
- 1 cup breadcrumbs (panko for extra crispiness)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray
Instructions
- Preheat the air fryer to 375°F (190°C).
- Optional: Sprinkle eggplant slices with salt and let them sit for 15-20 minutes, then pat dry.
- Set up a breading station with three bowls: one with beaten eggs, one with breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Dip each eggplant slice into the egg mixture, then coat with the breadcrumb mixture. Press lightly to help the coating stick.
- Lightly spray the air fryer basket with olive oil and arrange the eggplant slices in a single layer.
- Air fry for 10-12 minutes, flipping halfway through and spraying lightly with olive oil for extra crispiness.
- Remove from the air fryer and serve immediately with marinara or your favorite dip.
