  • 1 medium eggplant, sliced into 1/4-inch rounds
  • 2 eggs, beaten
  • 1 cup breadcrumbs (panko for extra crispiness)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Optional: Sprinkle eggplant slices with salt and let them sit for 15-20 minutes, then pat dry.
  3. Set up a breading station with three bowls: one with beaten eggs, one with breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. Dip each eggplant slice into the egg mixture, then coat with the breadcrumb mixture. Press lightly to help the coating stick.
  5. Lightly spray the air fryer basket with olive oil and arrange the eggplant slices in a single layer.
  6. Air fry for 10-12 minutes, flipping halfway through and spraying lightly with olive oil for extra crispiness.
  7. Remove from the air fryer and serve immediately with marinara or your favorite dip.
