2 tablespoons all-purpose flour

1 1/2 cups whole milk

1/2 cup heavy cream

2 cloves garlic minced

2 cups broccoli florets

2 cups cauliflower florets

1 cup carrots sliced

1 cup sharp cheddar cheese shredded

1/2 cup Parmesan cheese grated

1/2 teaspoon salt

1/2 teaspoon black pepper

1/8 teaspoon ground nutmeg optional

2 tablespoons fresh parsley chopped


Instructions

1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. Bring a large pot of salted water to a boil. Add the broccoli, cauliflower, and carrots and blanch for 3–4 minutes until slightly tender. Drain and rinse with cold water.

3. In a medium saucepan over medium heat, melt the butter and whisk in the flour for 1–2 minutes to form a roux.

4. Slowly whisk in the milk and heavy cream and cook until the sauce thickens, about 5–7 minutes.

5. Add the garlic, cheddar cheese, Parmesan cheese, salt, pepper, and nutmeg. Stir until smooth and creamy.

6. Place the vegetables into the baking dish and pour the cheese sauce over them, mixing gently.

7. Bake uncovered for 25–30 minutes until the top is bubbly and lightly golden.
