  • 1 lb elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3 cups sharp white cheddar cheese, shredded
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp ground black pepper
  • 1/2 tsp mustard powder (optional)
  • 1/2 tsp garlic powder or onion powder (optional)
  • 1/4 tsp paprika or smoked paprika (optional, for topping)

Instructions

  1. Boil a large pot of salted water and cook macaroni until al dente. Drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Whisk in flour and stir for 1–2 minutes to create a roux.
  3. Gradually pour in milk and cream, whisking continuously until the sauce thickens.
  4. Lower heat and stir in shredded cheese in small batches until fully melted.
  5. Season with salt, pepper, mustard powder, and garlic powder if using.
  6. Combine cooked pasta with the cheese sauce and stir until evenly coated.
  7. (Optional) Transfer to a baking dish, top with extra cheese or breadcrumbs, and bake at 375°F (190°C) for 15–20 minutes until golden and bubbly.
