  • 1 lb Italian sausage (mild or spicy)
  • 1 package (16 oz) shelf-stable gnocchi
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups chopped kale (or spinach)
  • 1 small carrot, finely diced (optional)
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Olive oil, as needed for sautéing

Instructions

  1. Heat a large pot over medium heat. Add the sausage and cook until browned, breaking it into crumbles. Remove and set aside.
  2. In the same pot, sauté the diced onion in a bit of olive oil until soft, about 3–4 minutes. Add garlic and cook for another minute.
  3. Pour in the chicken broth and bring to a simmer, scraping up browned bits from the bottom of the pot. Add carrot if using.
  4. Stir in the gnocchi and cook for 3–4 minutes, until they float to the surface.
  5. Lower the heat and stir in the heavy cream, kale, and cooked sausage. Simmer for 5 more minutes.
  6. Season with salt and pepper to taste. Stir in Parmesan if desired.
  7. Serve hot, garnished with extra cheese and cracked black pepper.
