Description
A rich, velvety soup featuring tender potato gnocchi, savory Italian sausage, fresh spinach, and a creamy, flavorful broth. Perfect for cozy nights or an impressive, crowd-pleasing meal.
Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 1 medium yellow onion, finely diced
- 2 medium carrots, diced
- 3 cloves garlic, minced
- 4 cups chicken broth (low-sodium recommended)
- 1 cup heavy cream
- 16 oz potato gnocchi (fresh, frozen, or shelf-stable)
- 3 cups fresh spinach
- 1 tsp dried Italian herbs
- Salt and black pepper, to taste
- Optional garnish: grated Parmesan cheese and fresh parsley
Instructions
-
Heat olive oil in a large Dutch oven or soup pot over medium heat. Add sausage and cook until browned, about 5–7 minutes. Transfer sausage to a plate; set aside.
-
In the same pot, sauté diced onion and carrots for 4–5 minutes, until softened. Add minced garlic and cook for 30 seconds.
-
Pour in chicken broth, scraping up browned bits from the bottom. Stir in Italian herbs, salt, and pepper. Bring to a gentle boil.
-
Add gnocchi and simmer uncovered for 4–5 minutes, until gnocchi floats and is tender.
-
Reduce heat to low. Stir in heavy cream and return sausage to the pot. Simmer gently for 3–5 minutes.
-
Add fresh spinach and stir until wilted, 1–2 minutes. Adjust seasoning as needed.
-
Serve hot, garnished with Parmesan cheese and parsley if desired.
