Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium recommended)
  • 1 cup heavy cream
  • 16 oz potato gnocchi (fresh, frozen, or shelf-stable)
  • 3 cups fresh spinach
  • 1 tsp dried Italian herbs
  • Salt and black pepper, to taste
  • Optional garnish: grated Parmesan cheese and fresh parsley

Instructions

  1. Heat olive oil in a large Dutch oven or soup pot over medium heat. Add sausage and cook until browned, about 5–7 minutes. Transfer sausage to a plate; set aside.

  2. In the same pot, sauté diced onion and carrots for 4–5 minutes, until softened. Add minced garlic and cook for 30 seconds.

  3. Pour in chicken broth, scraping up browned bits from the bottom. Stir in Italian herbs, salt, and pepper. Bring to a gentle boil.

  4. Add gnocchi and simmer uncovered for 4–5 minutes, until gnocchi floats and is tender.

  5. Reduce heat to low. Stir in heavy cream and return sausage to the pot. Simmer gently for 3–5 minutes.

  6. Add fresh spinach and stir until wilted, 1–2 minutes. Adjust seasoning as needed.

  7. Serve hot, garnished with Parmesan cheese and parsley if desired.
