  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)
  • 1 tbsp olive oil

Instructions

  1. Cook the Sausage: Heat olive oil in a large pot over medium heat. Add the turkey sausage and break it into crumbles. Cook until browned, about 5-7 minutes. Remove from the pot and set aside.
  2. Sauté Vegetables: In the same pot, add the diced onion, garlic, carrots, and celery. Cook for 3-5 minutes until softened and fragrant.
  3. Simmer the Soup: Pour in the chicken broth, stir well, and bring to a simmer. Let it cook for 10-15 minutes until the vegetables are tender.
  4. Add Cream and Parmesan: Lower the heat and stir in the heavy cream, grated parmesan cheese, and Italian seasoning. Stir continuously to blend everything together.
  5. Combine Everything: Return the cooked sausage to the pot and let the soup simmer for another 5 minutes. Season with salt and black pepper to taste.
  6. Garnish and Serve: Sprinkle fresh parsley on top and serve warm with crusty bread or a side salad.
