- 2 celery stalks, diced
- 4 cups low-sodium chicken broth

- 1 cup freshly grated parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped (for garnish)
- 1 tbsp olive oil

- Cook the Sausage: Heat olive oil in a large pot over medium heat. Add the turkey sausage and break it into crumbles. Cook until browned, about 5-7 minutes. Remove from the pot and set aside.
