Ingredients

  • 1 lb Italian sausage (mild or hot)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large soup pot or Dutch oven, heat over medium heat. Add the Italian sausage, breaking it up as it cooks. Brown well, about 6–8 minutes.

  2. Add the diced onion and minced garlic. Cook for 3–4 minutes until the onion is soft and translucent.

  3. Stir in the diced carrots and cook for 1–2 more minutes.

  4. Pour in the chicken broth, scraping any browned bits from the bottom of the pot. Bring to a simmer.

  5. Simmer gently for 10–12 minutes, or until the carrots are tender.

  6. Lower the heat. Stir in the heavy cream and Parmesan cheese until melted and smooth.

  7. Add Italian seasoning, and season to taste with salt and pepper.

  8. Garnish with fresh parsley if desired, and serve hot.
