  • 1 lb Italian sausage (mild or spicy)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 small yellow onion, chopped
  • 2 medium carrots, diced
  • 23 garlic cloves, minced
  • 2 medium russet potatoes, cubed
  • 1 stalk celery (optional)
  • 4 cups chicken broth (low sodium preferred)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Crushed red pepper flakes (optional)
  • Fresh parsley for garnish
  • Cornstarch slurry (1 tbsp cornstarch + 2 tbsp water), optional

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the Italian sausage, breaking it apart. Remove and set aside.
  2. Add onion, carrots, and celery to the pot. Sauté for 5 minutes until softened. Add garlic and cook 1 minute more.
  3. Stir in potatoes, Italian seasoning, salt, pepper, and red pepper flakes. Cook for 2 minutes.
  4. Pour in chicken broth, scrape up any browned bits, and return sausage to the pot. Bring to a boil, then reduce heat and simmer for 15–20 minutes.
  5. Lower heat to low, add heavy cream, then slowly stir in Parmesan until melted and smooth.
  6. If using, stir in cornstarch slurry and simmer a few more minutes to thicken.
  7. Taste and adjust seasonings. Garnish with chopped parsley and extra Parmesan before serving.
