- 1 lb Italian sausage (mild or spicy)
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 small yellow onion, chopped
- 2 medium carrots, diced
- 2–3 garlic cloves, minced
- 2 medium russet potatoes, cubed
- 1 stalk celery (optional)
- 4 cups chicken broth (low sodium preferred)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- Crushed red pepper flakes (optional)
- Fresh parsley for garnish
- Cornstarch slurry (1 tbsp cornstarch + 2 tbsp water), optional
Instructions
- In a large pot, heat olive oil over medium-high heat. Brown the Italian sausage, breaking it apart. Remove and set aside.
- Add onion, carrots, and celery to the pot. Sauté for 5 minutes until softened. Add garlic and cook 1 minute more.
- Stir in potatoes, Italian seasoning, salt, pepper, and red pepper flakes. Cook for 2 minutes.
- Pour in chicken broth, scrape up any browned bits, and return sausage to the pot. Bring to a boil, then reduce heat and simmer for 15–20 minutes.
- Lower heat to low, add heavy cream, then slowly stir in Parmesan until melted and smooth.
- If using, stir in cornstarch slurry and simmer a few more minutes to thicken.
