12 oz fettuccine pasta

1 lb ground beef

4 tbsp unsalted butter

4 cloves garlic minced

1 ¼ cups heavy cream

1 cup freshly grated Parmesan cheese

1 tsp salt

½ tsp black pepper

2 tbsp fresh parsley chopped

½ tsp crushed red pepper flakes optional

½ cup reserved pasta water


Instructions

1. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Reserve ½ cup of pasta water before draining.

2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat and set aside.

3. Lower heat to medium. Melt butter in the same skillet and add minced garlic. Cook until fragrant, about 1–2 minutes.

4. Pour in heavy cream and simmer for 3–4 minutes. Stir in Parmesan until smooth and creamy.

5. Return cooked beef to the skillet and stir to combine. Let it simmer for 2 more minutes.

6. Add cooked fettuccine to the skillet. Toss to coat with sauce. Add reserved pasta water a little at a time if needed.

7. Season with salt, black pepper, and red pepper flakes.

8. Garnish with chopped parsley and extra Parmesan before serving.


Notes

For best texture, use freshly grated Parmesan instead of pre-shredded cheese.

Always reserve some pasta water to adjust sauce consistency.

If the sauce gets too thick when reheating, stir in a splash of cream or milk to loosen it.
