Description

Rich, garlicky Alfredo sauce with tender chunks of chicken and savory mushrooms pairs perfectly with golden hot honey roasted potatoes. This comforting yet gourmet dinner combines creamy, earthy, sweet, and spicy flavors in one irresistible plate. 2 large chicken breasts

1 ½ cups heavy cream

1 cup sliced button or cremini mushrooms

3 cloves garlic minced

2 tbsp unsalted butter

1 tbsp olive oil

½ cup freshly grated Parmesan cheese

1 tsp dried Italian herbs

Salt to taste

Black pepper to taste

Fresh parsley chopped for garnish

1 lb baby potatoes halved

2 tbsp olive oil

2 tsp smoked paprika

1 tsp garlic powder

Salt to taste

Black pepper to taste

2 tbsp hot honey

Fresh parsley chopped for garnish


Instructions

1. Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Roast cut-side down for 20–25 minutes, flipping halfway. In the last 5 minutes, drizzle with hot honey and return to oven.

2. Heat olive oil and butter in a large oven-safe skillet. Season chicken with salt, pepper, and Italian herbs. Sear 3–4 minutes per side until golden, then remove from skillet.

3. In the same skillet, cook mushrooms for 5–6 minutes until browned. Add more butter or oil if needed.

4. Add minced garlic to mushrooms, sauté 30 seconds. Pour in heavy cream and scrape browned bits. Simmer 3–4 minutes.

5. Stir in Parmesan until melted and smooth. Return chicken to skillet and coat in sauce. Simmer 2–3 minutes until chicken is cooked through.

6. Plate chicken Alfredo with hot honey potatoes. Garnish with parsley.


Notes

Freshly grated Parmesan ensures a creamier sauce.

Let potatoes rest a couple of minutes before serving so the honey glaze sets.

For a lighter sauce, swap half the cream for milk or broth.
