Ingredients
1 lb ribeye or sirloin steak
1 medium zucchini
2 cups cooked rice
1 tablespoon olive oil
1 teaspoon salt (divided, to taste)
1/2 teaspoon black pepper (divided, to taste)
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1 tablespoon butter
2 cloves garlic, minced
1 tablespoon all-purpose flour
3/4 cup heavy cream
1/4 cup grated parmesan cheese
1/2 teaspoon Dijon mustard
1 teaspoon chopped fresh parsley
Optional toppings:
Red pepper flakes
Chopped chives or green onions
Sesame seeds
Fried egg
Instructions
1. Pat steak dry and season both sides with salt, black pepper, garlic powder, and smoked paprika. Let it rest at room temperature for 30 minutes.
2. Cook rice if not already prepared. Flavor with salt or a splash of soy sauce for extra taste.
3. Slice zucchini into 1/4-inch thick rounds and toss with olive oil, salt, and pepper.
4. Grill zucchini over medium-high heat for 2–3 minutes per side until tender and charred. Set aside.
5. Grill steak for 3–4 minutes per side (depending on thickness) or until desired doneness. Let rest for 5–7 minutes, then slice against the grain.
6. In a saucepan, melt butter and sauté minced garlic until fragrant.
7. Whisk in flour and cook for 1 minute to form a roux.
8. Slowly add heavy cream while whisking to avoid lumps.
9. Stir in Dijon mustard, parmesan cheese, parsley, salt, and black pepper. Simmer until sauce thickens.
10. Assemble the bowls: rice first, then zucchini, steak, and drizzle warm cream sauce on top. Garnish with toppings as desired.
Notes
Let the steak rest after cooking to lock in juices and prevent dryness.
Grill zucchini quickly over high heat to keep it firm and charred, not soggy.
Sauce too thick? Add a splash of milk or cream and whisk until smooth.
