Ingredients
2 pounds russet or Yukon Gold potatoes, peeled and chopped
4 tablespoons unsalted butter
1/2 cup heavy cream
Salt, to taste
Freshly ground black pepper, to taste
1/2 teaspoon garlic powder or roasted garlic (optional)
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil or butter
4 cloves garlic, finely minced
1/2 cup chicken broth or seafood stock
3/4 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes (optional)
Salt and black pepper, to taste
2 tablespoons chopped fresh parsley
Squeeze of lemon juice (optional)
Instructions
1. Boil potatoes in salted water until fork-tender (about 15–20 minutes). Drain, then mash with butter, cream, salt, and pepper until smooth. Keep warm.
2. Pat shrimp dry, season lightly with salt and pepper, and set aside.
3. In a large skillet, heat olive oil or butter. Sear shrimp for 1–2 minutes per side until pink. Remove and set aside.
4. In the same skillet, sauté minced garlic. Deglaze pan with broth, then add cream. Simmer gently.
5. Stir in Parmesan, Italian seasoning, and red pepper flakes. Cook until sauce thickens slightly.
6. Return shrimp to skillet and coat in sauce. Cook 1–2 minutes more. Add parsley and lemon juice if desired.
7. Serve shrimp and sauce over mashed potatoes. Garnish with parsley and pepper. Enjoy!
Notes
For creamier mashed potatoes, add sour cream or cream cheese.
Avoid overcooking shrimp—they turn rubbery if left too long in the pan.
Deglazing the pan after searing shrimp builds deep, savory flavor in the sauce.
