- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 garlic cloves, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 12 oz penne pasta
- 1 cup freshly grated parmesan cheese
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Season diced chicken with salt and pepper.
- In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken until golden and fully cooked. Remove and set aside.
- Lower heat to medium. In the same pan, add more butter if needed and sauté garlic until fragrant.
- Pour in chicken broth and deglaze the pan, scraping up brown bits.
- Stir in heavy cream and bring to a gentle simmer.
- Add uncooked penne pasta. Cover and simmer for 12–14 minutes, stirring occasionally.
- When pasta is al dente, reduce heat and stir in parmesan cheese until melted.
- Return chicken to the pan and stir until fully coated.
- Simmer briefly, garnish with parsley if desired, and serve hot.
