Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 garlic cloves, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 12 oz penne pasta
  • 1 cup freshly grated parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Season diced chicken with salt and pepper.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken until golden and fully cooked. Remove and set aside.
  3. Lower heat to medium. In the same pan, add more butter if needed and sauté garlic until fragrant.
  4. Pour in chicken broth and deglaze the pan, scraping up brown bits.
  5. Stir in heavy cream and bring to a gentle simmer.
  6. Add uncooked penne pasta. Cover and simmer for 12–14 minutes, stirring occasionally.
  7. When pasta is al dente, reduce heat and stir in parmesan cheese until melted.
  8. Return chicken to the pan and stir until fully coated.
  9. Simmer briefly, garnish with parsley if desired, and serve hot.
