- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 6 garlic cloves, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon fresh thyme (optional)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Pat chicken breasts dry and season with salt and pepper.
- In a large skillet over medium-high heat, heat olive oil and 1 tablespoon butter. Sear chicken until golden and cooked through, about 4–5 minutes per side. Remove and set aside.
- Lower heat and add remaining butter. Sauté garlic until fragrant, about 1 minute.
- Deglaze the pan with chicken broth, scraping up browned bits. Simmer 2–3 minutes.
- Stir in heavy cream and bring to a gentle simmer.
- Add Parmesan cheese, stirring until smooth. Season with additional salt, pepper, and thyme if using.
- Return chicken to the pan, spoon sauce over, and simmer 8–10 minutes until heated through.
- Garnish with parsley and serve hot.
