  • 2 large boneless, skinless chicken breasts (sliced in half for even cooking)
  • 4 garlic cloves (whole or minced)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ⅓ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Chicken
    • Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
  2. Sear the Chicken
    • Heat olive oil and butter in a large skillet over medium-high heat.
    • Sear the chicken for 5-6 minutes per side, until golden brown. Remove and set aside.
  3. Sauté the Garlic
    • In the same pan, add the garlic cloves and sauté for 1-2 minutes until fragrant.
  4. Make the Creamy Sauce
    • Pour in the chicken broth and let it simmer for a couple of minutes, scraping up any browned bits.
    • Stir in the heavy cream and Parmesan cheese, allowing it to melt and thicken slightly.
  5. Simmer the Chicken
    • Return the chicken to the skillet, spooning the sauce over the top.
    • Let it simmer for 5-7 minutes, until the chicken is fully cooked (internal temp: 165°F/75°C).
  6. Garnish and Serve
    • Sprinkle fresh parsley over the dish and serve warm with your favorite sides.
