  • 1 lb beef sirloin or stew beef, cut into bite-sized pieces
  • 1 package (9 oz) cheese tortellini, fresh or refrigerated
  • 3 cups fresh spinach, roughly chopped
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup beef broth
  • 1/2 tsp Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat 1 tbsp of butter in a large skillet over medium-high heat. Sear beef until browned on all sides (4–6 minutes). Season with salt and pepper. Remove and set aside.
  2. Lower heat to medium. Add remaining 2 tbsp butter and minced garlic. Sauté for 1 minute until fragrant.
  3. Add beef broth and deglaze the skillet, scraping up brown bits. Stir in heavy cream and Italian seasoning. Simmer 3–4 minutes to thicken.
  4. Stir in tortellini. Cover and cook for 4–5 minutes until tender.
  5. Return beef to skillet. Add spinach and stir until wilted (1–2 minutes).
  6. Remove from heat. Garnish with Parmesan if using. Serve hot.
