- 1 lb beef sirloin or stew beef, cut into bite-sized pieces
- 1 package (9 oz) cheese tortellini, fresh or refrigerated
- 3 cups fresh spinach, roughly chopped
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup beef broth
- 1/2 tsp Italian seasoning
- Salt and freshly ground black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Heat 1 tbsp of butter in a large skillet over medium-high heat. Sear beef until browned on all sides (4–6 minutes). Season with salt and pepper. Remove and set aside.
- Lower heat to medium. Add remaining 2 tbsp butter and minced garlic. Sauté for 1 minute until fragrant.
- Add beef broth and deglaze the skillet, scraping up brown bits. Stir in heavy cream and Italian seasoning. Simmer 3–4 minutes to thicken.
- Stir in tortellini. Cover and cook for 4–5 minutes until tender.
- Return beef to skillet. Add spinach and stir until wilted (1–2 minutes).
- Remove from heat. Garnish with Parmesan if using. Serve hot.
