Ingredients
2 cups eggnog
1 cup heavy cream
1/4 cup granulated sugar
2 1/4 teaspoons unflavored gelatin
3 tablespoons cold water
1 teaspoon pure vanilla extract
1/2 teaspoon ground nutmeg
Whipped cream (optional garnish)
Star anise (optional garnish)
Fresh cranberries or holly (optional garnish)
Instructions
1. In a small bowl, sprinkle the gelatin over cold water and let it bloom for 5-10 minutes.
2. Combine eggnog, cream, and sugar in a saucepan. Heat over medium-low, stirring until warm but not boiling.
3. Remove from heat and stir in the bloomed gelatin until fully dissolved. Add vanilla and nutmeg.
4. Strain the mixture if desired for a smoother texture.
5. Pour into molds and let cool for 15-20 minutes.
6. Cover and refrigerate for at least 4 hours or overnight.
7. Dip molds in warm water briefly to release.
8. Garnish and serve chilled.

Use full gelatin for firm texture or slightly less for a softer result.
