- Salt and black pepper to taste

- Add sliced onions with a pinch of salt. Cook for 30-40 minutes, stirring often, until deeply caramelized.
- Meanwhile, cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
