Ingredients
2 boneless skinless chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
8 ounces spaghetti
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1 ½ cups shredded mozzarella cheese
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Pat chicken breasts dry and season both sides generously with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side until cooked through and golden brown. Remove and let rest.
3. Meanwhile, cook spaghetti in salted boiling water until al dente. Drain, reserving ½ cup pasta water.
4. In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
5. Pour in heavy cream and stir gently. Add shredded mozzarella slowly, stirring until melted into a smooth sauce.
6. Add cooked spaghetti into the sauce, tossing to coat. If sauce is too thick, add a splash of pasta water.
7. Slice rested chicken and place on top of the spaghetti.
8. Garnish with fresh parsley and serve hot.
Notes
Always shred your mozzarella fresh for the best melt—pre-shredded cheese won’t give a creamy finish.
