400g linguine

2 boneless skinless chicken breasts

1 tablespoon Cajun seasoning

1 tablespoon olive oil

1 tablespoon butter (for searing)

3 cloves garlic, minced

1 tablespoon butter (for sauce)

1 ¼ cups heavy cream

1 ½ cups shredded low-moisture mozzarella cheese

¼ cup grated parmesan cheese

Salt, to taste

Black pepper, to taste

Chopped fresh parsley, for garnish


Instructions

1. Bring a large pot of salted water to a boil and cook the linguine until al dente. Reserve ½ cup of pasta water, then drain and set aside.

2. Season chicken breasts with Cajun seasoning, salt, and pepper.

3. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side, until golden and cooked through. Remove and rest.

4. In the same skillet, lower heat to medium. Add a bit more butter and sauté garlic for 30 seconds.

5. Pour in heavy cream, bringing it to a gentle simmer.

6. Stir in mozzarella and parmesan until melted and smooth. Add pasta water a bit at a time if sauce is too thick.

7. Toss cooked linguine into the sauce until fully coated.

8. Slice the rested chicken and lay it over the creamy pasta.

9. Garnish with chopped parsley and serve immediately.


Notes

Let the mozzarella come to room temperature before adding to the sauce—it melts smoother.

Pound the chicken breasts to an even thickness for even cooking.
