12 oz fettuccine
2 boneless skinless chicken breasts
1 tablespoon Cajun seasoning
1 tablespoon olive oil
1 tablespoon butter (for chicken)
3 tablespoons butter (for sauce)
4 cloves garlic, minced
1 ½ cups heavy cream
1 ½ cups shredded mozzarella cheese
½ cup grated parmesan cheese
¼ teaspoon red pepper flakes (optional)
Salt, to taste
Black pepper, to taste
2 tablespoons chopped fresh parsley
½ cup reserved pasta water (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente. Reserve ½ cup of pasta water before draining.
2. Season chicken breasts with Cajun seasoning, salt, and pepper.
3. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear chicken for 5–6 minutes per side until cooked through. Remove and rest before slicing.
4. In the same skillet, melt 3 tablespoons butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
