  • 12 oz (340 g) pasta (spaghetti, bucatini, or fettuccine)
  • 6 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 12 oz (340 g) mushrooms (cremini, shiitake, or mixed), sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Reserved pasta water, as needed

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet over medium heat, melt butter. Allow it to foam, bubble, and turn golden brown, stirring occasionally.
  3. Add olive oil, then toss in the mushrooms. Sauté until golden and tender, about 7–8 minutes.
  4. Stir in minced garlic; cook until fragrant, about 1 minute.
  5. Pour in heavy cream and simmer gently for 2–3 minutes until slightly thickened.
  6. Add cooked pasta directly into the sauce. Toss to coat, adding reserved pasta water a little at a time if needed to loosen the sauce.
  7. Stir in Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
  8. Serve immediately with extra Parmesan and a sprinkle of black pepper, if desired.
