This Broccoli Cheddar Soup is a rich, creamy, and comforting dish perfect for a cozy meal. Made with fresh broccoli, sharp cheddar cheese, and a velvety smooth base, this soup is both delicious and satisfying. Serve it with crusty bread for the ultimate comfort food experience.

Ingredients

Scale

  • 4 cups fresh broccoli florets (chopped)
  • 2 cups sharp cheddar cheese (freshly grated)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup shredded carrots
  • 2 cups vegetable broth
  • 1 cup milk
  • 1 cup heavy cream
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • ¼ teaspoon ground nutmeg (optional)

Instructions

  1. Prepare Ingredients: Chop the broccoli, grate the carrots, shred the cheese, and finely dice the onion and garlic.
  2. Sauté Aromatics: In a large pot, melt butter over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant.
  3. Make the Roux: Stir in the flour and cook for about a minute, whisking constantly to avoid lumps.
  4. Add Liquids: Slowly pour in the vegetable broth, followed by the milk and heavy cream, stirring continuously.
  5. Cook the Vegetables: Add the shredded carrots and chopped broccoli. Simmer for 10-15 minutes, or until the broccoli is tender.
  6. Blend (Optional): For a smoother soup, blend part of the mixture with an immersion blender. Leave some broccoli pieces intact for texture.
  7. Add Cheese: Reduce heat to low and gradually stir in the shredded cheddar cheese until fully melted and smooth.
  8. Season and Serve: Add salt, black pepper, and nutmeg if using. Stir well and serve warm, garnished with extra cheddar cheese if desired.
