10 oz frozen spinach (or 1 lb fresh spinach, blanched and drained)

2 tablespoons butter

2 cloves garlic, minced

1 small onion, finely diced

2 tablespoons all-purpose flour

1 cup heavy cream

1/2 cup whole milk

1/2 cup freshly grated Parmesan cheese

1/4 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Thaw frozen spinach and squeeze out excess liquid. If using fresh, blanch in boiling water for 30 seconds, then cool and drain thoroughly.

2. In a large skillet, melt butter over medium heat. Add onion and sauté until translucent, about 3–4 minutes.

3. Stir in garlic and cook for 30 seconds until fragrant.

4. Add flour and stir continuously for 1–2 minutes to create a roux.

5. Slowly whisk in the cream and milk, stirring to avoid lumps. Let it simmer until it thickens slightly.

6. Stir in Parmesan cheese, nutmeg, salt, and pepper. Cook until cheese is fully melted.

7. Add the spinach and stir to combine with the cream sauce. Simmer for 2–3 minutes to blend flavors.

8. Taste and adjust seasoning if needed, then serve warm.


Notes

Make sure to squeeze spinach thoroughly to prevent a watery dish.

Use freshly grated Parmesan for the best texture and flavor.

For a lighter version, substitute half of the cream with more milk.
