  • 1 9-inch pie crust (store-bought or homemade)
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 can (15 oz) peach slices in juice or light syrup, drained and patted dry
  • 1 tbsp cornstarch (optional, for added thickness)
  • Powdered sugar for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Blind bake the pie crust for 12–15 minutes or until golden. Let it cool completely.
  2. In a mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and fluffy.
  3. If using cornstarch, dissolve it in a tablespoon of water and mix into the cream cheese mixture for added firmness.
  4. Spread the cream cheese mixture evenly into the cooled crust.
  5. Arrange the peach slices over the top of the cream layer in a decorative pattern.
  6. Cover and chill the pie in the refrigerator for at least 4 hours, preferably overnight.
  7. Before serving, dust lightly with powdered sugar if desired.
  8. Slice with a clean, sharp knife and serve cold.
