Ingredients
16 oz cream cheese, softened
2 cups sharp cheddar cheese, freshly shredded
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
1/2 teaspoon salt
2 tablespoons fresh chives, finely chopped (plus more for coating)
1/2 cup dried cranberries, chopped (plus more for coating)
1 cup pecans, toasted and chopped (divided for mix-in and coating)
Optional: a pinch of cayenne pepper or a dash of hot sauce
Crackers or pretzels, for serving
Instructions
1. Let the cream cheese sit at room temperature for 30–45 minutes until softened.
2. Toast the pecans in a dry skillet over medium heat for 4–5 minutes. Let them cool, then chop.
3. In a large bowl, mix cream cheese, cheddar, garlic powder, onion powder, salt, pepper, and optional cayenne/hot sauce until smooth.
4. Fold in half of the chopped pecans, 1/2 cup cranberries, and 2 tablespoons chives.
5. Scoop the mixture onto plastic wrap, form into a ball, and chill for at least 1 hour.
6. Mix the remaining pecans, cranberries, and chives in a shallow bowl.
7. Roll the chilled cheese ball in the coating mixture, pressing gently to adhere.
8. Let it rest at room temperature for 10 minutes before serving with crackers or pretzels.
Notes
Toasting the pecans brings out their deep, nutty flavor and adds crunch.
Softening the cream cheese is crucial for achieving a smooth mixture.
For best results, coat the cheese ball just before serving to keep the outer texture fresh.
