2 cups fresh cranberries, finely chopped

1 cup granulated sugar

1 can (20 oz) crushed pineapple, drained

2 cups mini marshmallows

2 cups whipped topping (Cool Whip or homemade)

1/2 cup chopped pecans (optional)


Instructions

1. Finely chop the fresh cranberries using a food processor. Do not puree them.

2. Transfer cranberries to a bowl, sprinkle with sugar, stir, and let sit in the refrigerator for at least 1 hour (or overnight).

3. Stir in the drained crushed pineapple and mini marshmallows.

4. Gently fold in the whipped topping until the mixture is well combined and fluffy.

5. If using chopped pecans, fold them in at this stage.

6. Cover and refrigerate for at least 2 hours before serving to allow the flavors to blend and marshmallows to soften.
