1 sheet puff pastry, thawed

4 oz Brie cheese, sliced

⅓ cup cranberry sauce

¼ cup cooked pancetta, crumbled

45 sprigs fresh thyme

1 egg, beaten (for egg wash)

⅛ tsp freshly cracked black pepper (optional)


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Unfold the thawed puff pastry onto the sheet and let it rest until slightly pliable.

3. Use a knife to score a 1-inch border around the edges of the pastry; prick the center with a fork.

4. Spread cranberry sauce evenly within the scored border.

5. Layer sliced Brie over the cranberry sauce, spacing slightly apart.

6. Sprinkle cooked pancetta evenly over the Brie.

7. Strip thyme leaves from sprigs and scatter over the tart.

8. Brush the border of the pastry with beaten egg.

9. Optionally, crack a bit of black pepper over the top.

10. Bake for 20–25 minutes, or until the pastry is puffed and golden.

11. Remove from oven and let cool for 5 minutes before slicing.

12. Serve warm or at room temperature.


Notes

Don’t overload with cranberry sauce or Brie—thin, even layers give the best texture.

Use cold Brie for easier slicing and a more even melt.

Let the tart cool for 5 minutes before slicing to prevent the cheese from running too much.
