- 2 boneless, skinless chicken breasts (or thighs), cut into strips
- 8 oz fettuccine or linguine pasta
- 5 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- ¼ cup grated Parmesan (optional)
- ½ cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain.
- While pasta cooks, season chicken strips with salt and pepper.
