  • 2 boneless, skinless chicken breasts (or thighs), diced
  • 8 oz linguine pasta
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • ½ teaspoon crushed red pepper flakes (adjust to taste)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • ½ cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.
  2. In a large skillet over medium heat, melt the butter. Add minced garlic and cook for about 1 minute until fragrant.
  3. Stir in the Dijon mustard, lemon juice, paprika, crushed red pepper flakes, salt, and black pepper. Simmer briefly.
  4. Season the chicken with a little salt and pepper, then add to the skillet. Cook for 6–8 minutes until golden and cooked through.
  5. Lower the heat and stir in the heavy cream. Simmer for 2–3 minutes until creamy and thickened.
  6. Toss the cooked linguine into the sauce. Add reserved pasta water as needed to loosen the sauce.
  7. Sprinkle with chopped fresh parsley.
  8. Serve immediately, garnished with extra parsley if desired.
