Ingredients
- 2 boneless, skinless chicken breasts (or thighs), diced
- 8 oz linguine pasta
- 6 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon paprika
- ½ teaspoon crushed red pepper flakes (adjust to taste)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup heavy cream
- 2 tablespoons fresh parsley, chopped
- ½ cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.
- In a large skillet over medium heat, melt the butter. Add minced garlic and cook for about 1 minute until fragrant.
- Stir in the Dijon mustard, lemon juice, paprika, crushed red pepper flakes, salt, and black pepper. Simmer briefly.
- Season the chicken with a little salt and pepper, then add to the skillet. Cook for 6–8 minutes until golden and cooked through.
- Lower the heat and stir in the heavy cream. Simmer for 2–3 minutes until creamy and thickened.
- Toss the cooked linguine into the sauce. Add reserved pasta water as needed to loosen the sauce.
- Sprinkle with chopped fresh parsley.
- Serve immediately, garnished with extra parsley if desired.
