Ingredients
1 cup cottage cheese (blended smooth)
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon olive oil (optional)
2 tablespoons chopped fresh herbs (optional)
1/2 teaspoon garlic powder (optional)
Instructions
1. Blend the cottage cheese in a blender or food processor until smooth and creamy.
2. In a large bowl, mix flour, baking powder, and salt. Add garlic powder or herbs if using.
3. Stir in the blended cottage cheese and mix until a shaggy dough forms.
4. Transfer to a floured surface and knead gently for 2–3 minutes until soft and smooth.
5. Cover with a towel and let the dough rest for 10–15 minutes.
6. Divide the dough into 6–8 equal pieces and roll each into a ball. Flatten into discs about 1/4 inch thick.
7. Heat a non-stick skillet over medium heat. Cook each flatbread for 2–3 minutes per side until golden and puffed.
8. Brush with olive oil or butter and sprinkle with herbs before serving.
Notes
Blend the cottage cheese fully for a smoother dough and better texture.
Avoid adding too much flour when kneading to keep the bread soft.
Let the dough rest before rolling to make it easier to shape and softer after cooking.
