Ingredients

Scale

3/4 cup unsalted butter, melted

1 cup granulated sugar

1/2 cup light brown sugar, packed

2 large eggs

1 tablespoon vanilla extract

3/4 cup unsweetened cocoa powder

1/2 teaspoon salt

2/3 cup all-purpose flour

1 tablespoon cornstarch

1/4 teaspoon baking powder

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

1 pinch salt

Rainbow candy-coated mini chips or sprinkles

Instructions

1. Preheat oven to 325°F (163°C) and line an 8×8 inch pan with parchment paper. Lightly spray with non-stick spray.

2. In a bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.

3. Add eggs and vanilla extract. Whisk until mixture is pale and fluffy.

4. Sift in cocoa powder, flour, cornstarch, salt, and baking powder. Fold gently until just combined.

5. Pour batter into the prepared pan, smooth the top, and bake for 30–35 minutes. Let cool completely.

6. Heat heavy cream until simmering. Pour over chocolate chips and let sit for 2–3 minutes. Stir until smooth ganache forms. Add a pinch of salt.

7. Pour ganache over cooled brownies and spread evenly. Top with rainbow chips.

8. Chill for at least 1 hour to set the ganache, then slice with a warm knife for clean edges.

Notes

Let brownies cool fully before adding ganache to prevent melting.

Use parchment paper for easy removal and clean slicing.

Warm your knife under hot water for perfect, bakery-style cuts.
