- 1 lb ground beef
- 1 small yellow onion, diced
- 2 medium carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 3 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 2 large russet potatoes, peeled and diced
- 2 cups whole milk
- 2 cups shredded sharp cheddar cheese (freshly grated)
- 1/2 cup sour cream
- Salt and pepper, to taste
- Optional: Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Break it into crumbles and cook until no longer pink. Remove and set aside. Drain excess fat.
- Add butter to the pot. Once melted, add onions, carrots, and celery. Sauté for 5–6 minutes until softened. Add garlic and cook for 1 more minute.
- Sprinkle flour over the vegetables and stir well to coat. Cook for 2 minutes to eliminate the raw flour taste.
