Ingredients
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, beat together peanut butter, butter, granulated sugar, and brown sugar until fluffy (about 2–3 minutes).
3. Add the egg and vanilla extract, mixing until fully incorporated.
4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
5. Gradually add the dry mixture to the wet, mixing just until combined.
6. Scoop the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
7. Flatten each ball gently with a fork in a crisscross pattern.
8. Bake for 9–11 minutes or until edges are golden and centers are just set.
9. Let cookies cool on the baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely.
Notes
Use room temperature butter and peanut butter for the smoothest dough and even texture.
Don’t overbake — remove cookies when the edges are lightly golden, even if the centers look slightly soft.
For extra flavor and texture, fold in chocolate chips or chopped peanuts before baking.
