Ingredients
1 cup mayonnaise
1 clove garlic, finely grated
1 ½ teaspoons anchovy paste
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
2 tablespoons fresh lemon juice
⅓ cup finely grated Parmesan cheese
Salt, to taste
Black pepper, to taste
1–2 teaspoons water (optional, to thin if needed)
Instructions
1. Grate or finely mince the garlic and mix it with anchovy paste until smooth.
2. Whisk in Dijon mustard and Worcestershire sauce until well combined.
3. Add mayonnaise and fresh lemon juice, then whisk until smooth and creamy.
4. Fold in the grated Parmesan cheese.
5. Season with salt and freshly ground black pepper to taste.
6. Add a little water if the dressing is too thick and whisk again.
7. Chill in the fridge for 15–30 minutes for best flavor or use immediately.
Notes
Use fresh lemon juice and freshly grated Parmesan for best flavor.
If you don’t like anchovies, substitute with 1 teaspoon capers or 1 teaspoon Worcestershire sauce.
