1 lb ground beef

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, chopped

3 medium potatoes, diced

1 cup green peas

1 can (14.5 oz) diced tomatoes

2 tablespoons tomato paste

4 cups beef broth

1 bay leaf

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Dice the onion, carrots, celery, and potatoes into evenly sized pieces. Mince the garlic and measure all seasonings.

2. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat if necessary.

3. Add onion and celery and sauté 3–4 minutes. Stir in garlic and cook briefly.

4. Stir in tomato paste and cook 1–2 minutes to deepen flavor.

5. Add diced tomatoes, beef broth, bay leaf, thyme, paprika, salt, and black pepper. Stir well.

6. Add carrots and potatoes. Bring to a boil, reduce heat, and simmer 20–25 minutes until tender.

7. Stir in green peas during the last 5 minutes.

8. Remove bay leaf, adjust seasoning, garnish with parsley, and serve hot.


Notes

For deeper flavor, brown the beef well before stirring too often.
