Ingredients
1 1/2 lbs boneless skinless chicken breasts or thighs
3 tablespoons olive oil
1 large lemon juiced
4 cloves garlic minced
2 teaspoons dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup plain Greek yogurt
1/2 cucumber grated and squeezed dry
2 tablespoons fresh dill chopped
1 tablespoon olive oil
1 tablespoon lemon juice
1 clove garlic minced
Salt to taste
2 cups cooked brown rice white rice or quinoa
1 cup cherry tomatoes halved
1/2 red onion thinly sliced
1 cup cucumber sliced
1/2 cup crumbled feta cheese
1 cup chopped romaine or mixed greens
Warm pita bread cut into wedges
Fresh dill or parsley for garnish optional
Instructions
1. In a bowl whisk olive oil lemon juice garlic oregano cumin paprika salt and pepper. Add chicken coat well cover and refrigerate for 30 minutes to 12 hours.
2. Combine yogurt grated cucumber dill olive oil lemon juice garlic and salt. Stir until creamy and refrigerate until ready.
