  • 1 cup (226g) unsalted European-style butter, at room temperature
  • 2/3 cup (80g) powdered sugar
  • 2 large egg yolks
  • 1 teaspoon pure vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1/4 teaspoon fine sea salt
  • 1/4 cup (50g) granulated sugar (for rolling edges, optional)

Instructions

  1. In a large bowl, cream together the butter and powdered sugar until light and fluffy (about 2–3 minutes).
  2. Add egg yolks one at a time, beating well after each addition, then mix in the vanilla.
  3. Gradually add flour and salt, mixing on low speed until just combined.
  4. Divide dough in half, roll each into a 1.5-inch diameter log, and wrap in parchment or plastic wrap.
  5. Chill the dough logs in the fridge for at least 2 hours or overnight.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  7. Roll chilled logs in granulated sugar if desired, then slice into 1/4-inch thick rounds.
  8. Place slices on prepared sheets, spacing them 1 inch apart.
  9. Bake 12–15 minutes, until edges are lightly golden.
  10. Cool on baking sheet for 5 minutes before transferring to a wire rack.
