2 large apples

1 1/2 cups all-purpose flour

1 cup granulated sugar

2 large eggs

3/4 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 teaspoons baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

2 tablespoons granulated sugar (for topping)

1 teaspoon cinnamon (for topping)


Instructions

1. Peel (optional) and dice the apples into 1/2-inch chunks. Set aside in a bowl.

2. In a large bowl, whisk together oil, sugar, eggs, and vanilla until smooth.

3. Sift in flour, baking powder, cinnamon, and salt. Stir gently until just combined.

4. Fold in the chopped apples. Batter will be thick.

5. Pour the batter into a greased 8×8-inch pan and smooth the top.

6. Mix the topping sugar and cinnamon together and sprinkle evenly over the batter.
