1 tablespoon olive oil

1 small onion finely chopped

2 garlic cloves minced

2 medium carrots peeled and sliced

2 celery stalks chopped

8 cups low-sodium chicken broth

2 cups cooked shredded chicken

9 oz cheese tortellini refrigerated or frozen

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon black pepper

Salt to taste

1 tablespoon fresh parsley chopped

1/4 cup grated Parmesan cheese optional

Juice of half a lemon optional


Instructions

1. Heat olive oil in a large soup pot over medium heat. Add chopped onion, carrots, and celery. Saute for 5–7 minutes until softened.

2. Stir in minced garlic, thyme, oregano, salt, and black pepper. Cook for 1–2 more minutes until fragrant.

3. Pour in chicken broth, scraping the bottom of the pot to release any browned bits. Bring to a gentle boil.

4. Add shredded chicken. Reduce heat and let the soup simmer for 10–15 minutes to develop flavor.

5. Stir in the tortellini and cook according to package directions about 5–7 minutes.

6. Remove from heat and stir in fresh parsley and lemon juice if using.

7. Taste and adjust seasoning if needed. Serve hot with extra parsley and Parmesan cheese.


Notes

To prevent overcooked pasta, cook tortellini separately if storing leftovers.

Add a splash of heavy cream or a spoon of pesto at the end for a richer flavor.
