  • 2 cups cooked, shredded chicken
  • 1/3 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1/4 cup finely diced celery
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped cherry tomatoes
  • 2 tbsp finely diced red onion
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the mayonnaise (or Greek yogurt) with lemon juice, salt, and pepper. Stir well to create the dressing.
