2 cups shredded green cabbage

1 cup grated carrot

1/2 cup finely sliced onion

1 clove garlic, minced

1/2 cup all-purpose flour

2 large eggs

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley

1/2 teaspoon baking powder

1/4 cup vegetable oil for frying


Instructions

1. Shred the cabbage finely, grate the carrots, slice the onion thinly, and mince the garlic. Place everything in a large bowl.

2. Sprinkle the vegetables with salt and allow them to sit for about 10–15 minutes to release excess moisture.

3. Squeeze the vegetables well using your hands or a clean towel to remove as much liquid as possible.

4. Add the flour, eggs, pepper, parsley, and baking powder to the bowl and mix until a thick batter forms.

5. Heat the oil in a large skillet over medium heat until hot.

6. Scoop spoonfuls of batter into the pan and flatten them slightly.

7. Cook each fritter for about 3–4 minutes per side until golden brown and crispy.

8. Transfer cooked fritters to a paper towel-lined plate to drain excess oil and serve warm.


Notes

Always squeeze out as much liquid as possible from the cabbage mixture to ensure crispy fritters.

Cook one small test fritter first to check seasoning and batter consistency.

Keep finished fritters warm in a low oven while you finish cooking the remaining batch.
