  • 1 lb elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 1/2 cups mozzarella cheese, shredded
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp ground mustard (optional)
  • 1/4 tsp paprika (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook macaroni in salted boiling water until just al dente. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes.
  4. Gradually whisk in warm milk and cream until the mixture thickens (5–6 minutes).
  5. Lower heat and stir in shredded cheeses, a handful at a time, until melted and smooth.
  6. Season with salt, pepper, and ground mustard (if using).
  7. Add cooked pasta to the cheese sauce and stir until fully coated.
  8. Pour the mixture into the greased baking dish and smooth the top.
  9. Sprinkle additional cheese or paprika on top if desired.
  10. Bake uncovered for 20–25 minutes or until golden and bubbly.
  11. Optional: Broil for 2–3 minutes at the end for extra browning. Serve hot.
