Cinnamon Sugar French Toast Muffins are a delicious twist on classic French toast. Made with cubed bread soaked in a sweet custard mixture, baked until golden, and topped with a cinnamon-sugar crust, these muffins are soft inside, crispy on top, and perfect for breakfast or brunch.

- 4–5 cups day-old bread, cubed
- 4 large eggs
- 1 cup milk (whole or any variety)
- 1/3 cup granulated sugar (plus extra for topping)
- 1 1/2 tsp ground cinnamon (plus extra for topping)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp melted butter
- Optional: powdered sugar for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
- Cut bread into 1/2-inch cubes and place in a large bowl.
- In a separate bowl, whisk together eggs, milk, sugar, cinnamon, vanilla, salt, and melted butter.
- Pour the custard mixture over the cubed bread. Stir gently and let sit for 10 minutes, occasionally mixing to ensure even soaking.
- Spoon the soaked bread mixture into the muffin cups, filling each about 3/4 full and pressing down lightly.
- In a small bowl, mix a tablespoon of sugar with a pinch of cinnamon and sprinkle over each muffin.
- Bake for 25–30 minutes or until tops are golden and centers are set.
- Let cool for 5 minutes in the pan, then transfer to a wire rack. Garnish with powdered sugar if desired.
