Description

Cinnamon Sugar French Toast Muffins are a delicious twist on classic French toast. Made with cubed bread soaked in a sweet custard mixture, baked until golden, and topped with a cinnamon-sugar crust, these muffins are soft inside, crispy on top, and perfect for breakfast or brunch.

  • 45 cups day-old bread, cubed
  • 4 large eggs
  • 1 cup milk (whole or any variety)
  • 1/3 cup granulated sugar (plus extra for topping)
  • 1 1/2 tsp ground cinnamon (plus extra for topping)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp melted butter
  • Optional: powdered sugar for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. Cut bread into 1/2-inch cubes and place in a large bowl.
  3. In a separate bowl, whisk together eggs, milk, sugar, cinnamon, vanilla, salt, and melted butter.
  4. Pour the custard mixture over the cubed bread. Stir gently and let sit for 10 minutes, occasionally mixing to ensure even soaking.
  5. Spoon the soaked bread mixture into the muffin cups, filling each about 3/4 full and pressing down lightly.
  6. In a small bowl, mix a tablespoon of sugar with a pinch of cinnamon and sprinkle over each muffin.
  7. Bake for 25–30 minutes or until tops are golden and centers are set.
  8. Let cool for 5 minutes in the pan, then transfer to a wire rack. Garnish with powdered sugar if desired.
