2 cups almond flour

2 teaspoons baking powder

1/2 cup granulated keto sweetener (erythritol or monk fruit)

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup keto-friendly eggnog

3 large eggs

1/4 cup melted butter

1 teaspoon vanilla extract

1/4 cup sliced almonds

1/4 cup powdered keto sweetener (for glaze, optional)

1 tablespoon almond milk or eggnog (for glaze, optional)


Instructions

1. Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.

2. In a bowl, whisk together almond flour, baking powder, cinnamon, and nutmeg.

3. In a separate bowl, mix eggs, melted butter, granulated sweetener, eggnog, and vanilla extract.

4. Combine the wet ingredients into the dry ingredients and stir until smooth.

5. Pour half of the batter into the prepared pan.

6. Sprinkle a mix of cinnamon and sweetener on top, then pour the remaining batter over it.

7. Use a knife to gently swirl the cinnamon layer through the batter.

8. Sprinkle sliced almonds on top.

9. Bake for 40–50 minutes or until a toothpick comes out clean.

10. Cool for 15 minutes in the pan, then transfer to a wire rack.

11. (Optional) Mix powdered sweetener with eggnog or almond milk to create glaze and drizzle over cooled bread.


Notes

Use room temperature eggs to help the batter mix smoothly.

Let the bread cool completely before slicing to avoid crumbling.

For extra flavor, toast the sliced almonds before adding them on top.
