Ingredients

Scale

6 oz bittersweet or semi-sweet chocolate, finely chopped

2 tbsp unsalted butter

1/4 tsp salt

1/2 tsp peppermint extract

2 large egg yolks

2 tbsp granulated sugar

1 1/4 cups heavy whipping cream (divided)

1/4 cup powdered sugar

Crushed peppermint candies

Whipped cream

Fresh mint leaves (optional)


Instructions

1. In a heatproof bowl over a saucepan of simmering water, melt the chopped chocolate with butter and salt, stirring until smooth. Remove from heat and let cool slightly.

2. Stir in peppermint extract. In a separate bowl, whisk egg yolks and sugar until pale. Mix into the cooled chocolate mixture. Let rest to room temperature.

3. In a chilled bowl, whip 1 cup heavy cream to soft peaks.

4. Gently fold the whipped cream into the chocolate in three parts, keeping the texture light.

5. Spoon mousse into serving glasses or ramekins. Smooth the tops and chill for at least 2 hours.

6. Whip remaining 1/4 cup cream with powdered sugar to soft peaks.

7. Top mousse with whipped cream, crushed peppermint candies, and mint leaves. Serve chilled.


Notes

Use high-quality chocolate (60% cocoa or more) for best flavor and consistency.

Chill your bowl and beaters before whipping cream for better volume.

Add peppermint candy just before serving to keep it crisp.
